It was raining all day and a bit chilly yesterday and was hungry for some soup. I thought it would be a perfect food for the weather. I'm kinda limited with my ingredients, though so I had to improvise something for a good soup. I came up with this and it turned out really well! Everybody liked it a lot.
I normally don't measure anything when cooking free-style... so amounts are mostly estimates, feel free to alter and use your own personal taste.
Ingredients:
- 1 lb lean ground beef
- 1 chopped medium white onion
- 1 cup elbow and macaroni noodles (I didn't have any noodles so I had to improvise and used the noodles from my Mac & Cheese box)
- 1 jar (or can) tomato soup (I used Jeb's mom's canned tomato soup -- it was excellent!)
- 1 package frozen mixed vegetables (corn, carrots, peas, green beans)
- 1/8 tsp each oregano, rosemary, thyme, basil, marjoram (or season to taste)
- 1/4 tsp each black pepper, salt, onion powder, garlic powder, all-purpose seasoning (or season to taste)
- 2-3 cups beef broth
Procedure:
- Brown beef in a pot, add all the spices (oregano, rosemary, thyme, basil, marjoram, pepper, salt, etc.) or add seasonings to own taste.
Here's a TIP: When cooking meat, spice it up while cooking in order to infuse all the seasonings into the meat, otherwise the meat will turn out not as seasoned and bland if you add the spices after it is cooked.
- Add onions until translucent.
- Keep sauteeing then add in the noodles (don't need to wait for noodles to cook all the way yet).
- Add tomato soup and mixed vegetables.
- Keep mixing and add beef broth until desired consistency or thickness to soup.
- Turn down heat and let simmer for 10-15 mins until noodles are cooked all the way.
- Serve and enjoy with some buttered bread. :)
